Tuesday Thai Chicken Enchiladas

I have been majorly neglecting house work lately… and cooking… Pretty much, I’ve been neglecting everything domestic.

Seriously. I think we had frozen pizza for dinner 3 nights last week.

I blame it on winter still being here. IN MARCH. (wasn’t it like 80 degrees at this point last year?)

Ugh.

This week I promised I would be better. That I would actually make dinner every night.
That didn’t happen. Monday night we got take out. It wasn’t even good. Blah.

So last night I decided to actually make dinner. To force myself to go to the grocery store and COOK.

So of course I went to my favorite cooking blog (and favorite blog in general) howsweeteats.com and searched for something relatively easy (because quit honestly, I just couldn’t handle failing at this).

I decided to go with these lovely Thai Chicken Enchiladas … uh. YUM. Sweet. Spicy. Comforting. JUST SO GOOD.

FOOD PROCESSORS ARE THE BEST >> how did I get through college without one!? Oh… that’s right. I didn’t cook. Ha.

My favorite pintrest trick EVER. Boil the chicken, the stick it in the mixer for 2 min .. ta da >> Shredded chicken. POW

At this point they it all just smelled so good … I may or may not have eaten multiple spoonfuls of this stuff before it made it into a tortilla… whoops.

Yum Yum Yum.

ACTUALLY. ALL of her Thai recipes are AMAZING (seriously.. try the thai chicken pizza… SO GOOD).

Anyways. I decided that taking pictures while cooking is stressful, and also almost leads to stuff burning… so if I ever cook again, you can be sure I am going to skip the pics of all the in between stuff. Seriously. Kudos to all of you food bloggers out there who can multi task so well.
